To determine what size of coffee roasting machine you need, you must first figure out two things: how much coffee you expect to be roasting and how much time you have to spend roasting.
In order to keep your operating costs down you should aim for roasting between one and two hours a day. If you find that you are expecting to be roasting more than two hours per day on a smaller roaster, then you should consider upgrading to a bigger roaster.
Here is a good rule of thumb, if you are looking to do just retail, then a roaster doing 15-18 lbs. per hour should be plenty to get started. If you are wanting to roast for wholesale, then you will need a roaster that does 50-60 lbs. per hour since your customers will be buying in large quantities.
Your time is precious, and you need to make sure you have time to do marketing and packaging as well.
